The "Dear-Lord-this-is-what-I-have-and-what-am-I-going-to-DO-with-it" Casserole.
Well, last week, I mentioned this casserole, and I thought you-all might like it. However, please be aware that this was a potluck casserole, so don't think "Gourmet."

What I had:
- 1 can Campbell's Cream of Mushroom soup
- milk
- about 1 1/2 cups of frozen green beans
- about 2 lb. individually frozen chicken tenderloins
- some onions (2, I think, about small fist sized)
- some shredded cheddar cheese (I had a lot of that, but I think I only used about 2 cups)
- white wine
- dijon mustard
- salt (sea salt) and pepper (fresh ground - remember what I said about pre-ground pepper?)
- oooh! Maybe some garlic (minced)
I mixed the soup with about 3/4 cup of milk, some salt and pepper, and about 1 TB of Dijon. I sliced the onions, and added them in to that along with the green beans. I put a dash (ok, ok, ok, it was more like 1/2 cup) of white wine in (I suppose you could put the garlic in now, too - about 1/2 tsp.?), and mixed it all together.
Then, I added in the (still frozen) chicken and about 1/2 the cheese, and baked it at 350°F, mixing once or twice, until it was mostly cooked through (you DO need a large casserole dish - mine bubbled all over my oven) - it took me about 45 minutes. (Remember, the chicken was frozen). Sprinkle the remaining cheese over the top and finish cooking, perhaps another 10 minutes.
It seemed to work. Beloved Husband loved it! You certainly could serve it over noodles or rice - or even add them at the beginning, since the mixture was a little too liquid. Serve it with a salad and some bread --- hey! t's not the healthiest thing, but it's what I did with what I had.
Go do some experiments in the kitchen yourself!
Wish I'd read this a couple days ago when I was staring at those frozen chicken breasts and they weren't talking!
