Made with basil from my very own garden! This is my very first-ever pesto, and it's very very easy - odd, though, that the recipe I used (loosely) didn't call for toasted pine nuts. I try to always toast any nuts I use in recipes because it really helps bring out their flavor.
On Wednesday night, I'm going to do grilled chicken thighs with Emeril's Southwest Seasoning (at the bottom of the Turkey and White Bean Chili recipe). The mix is very easy to make up, and it's also great to sprinkle on chicken before you roast it. I'm going to mix it with some oil and then coat the chicken thighs and marinate them for about 6-8 hours before I grill them. YUMMY!
Anyway, along with the chicken thighs, I'm going to use the pesto in this recipe for a pesto potato and green bean salad... Mmmmmm!
Oh, and I've got to take out the swordfish steaks from the freezer for tomorrow!
Good grief, you're sadistic! Why don't you just come down to Texas and GRAB my salivary glands and SQUEEEEEZE 'em 'til they turn to dust? I'm drooling all over myself more than my six month old daughter. You pulled out the big guns, girl! ;-)
Nothing like a simple dish of al dente pasta tossed with fresh pesto and a stack of lightly seasoned sliced tomato on the side. Perfect for a light and easy Summer afternoon lunch!

I...really...love tzatziki. I seriously freaking LOVE tzatziki! I LOVE GREEK FOOD!! There's this mom-n-pop restaurant in Freeport TX where the guy is Greek and his wife is Cajun and surprise, it's called "The Greek Cajun"...oh man, that's where I developed a screaming love affair with tzatziki with fresh homemade pita bread and steaming bowls of avgolemono soup and oh man I think I sprained a drool muscle...daaahhhh...
Gyeaah...Girl, you're gonna burn. Burn!! BURRRRRRRNNNNN!!!!

Diet? You don't need no steekin' DIET!!!! Tzatziki with low-fat yogurt is goooooood, and olive oil is a "good" fat. Plus, you've got the garlic, which is good for cholesterol and immune systems, and the mint which is lovely for an upset tummy besides tasting yummy...
And tzatziki is really the easiest thing to make - no cooking, just a bit of preparation and mixing.
So, 'Nita... When it is that y'all are coming for a visit again? ;-)

You're twisting my arm but good, woman. All you have to do now is free up about 1-2 weeks out of my husband's 12-hour graveyard-shift schedule, secure transportation for us so he's not trying to bomb up there half asleep, and give us money enough to cover transportation expenses PLUS making up for the financial hit incurred as he is out for those 1-2 weeks. You will also have to adjust Zane's summer school schedule and bimonthly psychologist visits. Mine and Tabi's schedules are free, though...and this IS tzatziki and pesto that we're talking about here, so it's not like this I'm being impulsive! ;-)

Well, the tzatziki, of course, but don't forget the steaks, the chocolate chip cookies, the homemade ice cream (did up two batches last night), the tarragon-dill chicken pasta salad... ;-)

pesto pasta salad... cook pasta, add diced zucchini to water... strain, add diced tomatoes.. stir in pesto... chill add grated Parmesan... FABULOUS! great with anything from the grill...
made fried green tomatoes with spicy romulade sauce tonight.. what's all the company for?
